NATURE'S ALCHEMY
Earth. Fire. Air. Water.
All these are required for maple syrup to become a reality.
We would argue that blood, sweat and tears are also mandatory. As is another miracle of nature : beer.
You know, to numb the pain of the process.
It's a simple journey, really, from sap to syrup :
Tap. Filter. Drink some beer. Boil. Boil some more. Drink more beer. Keep boiling. Filter. Swear. Beer. Heat. Bottle. Beer.
Simple. But not necessarily easy. Nature's a fickle beast, and she doesn't always cooperate.

Legend has it that it takes forty gallons of sap to make one precious gallon of sweet, golden maple syrup.
NOT IN THESE WOODS.
Our trees are mostly red maples - not the storied sugar maples that everyone usually associates with pure maple syrup.
Which means our trees have a lower sugar content. And they generally seem to be stellar underachievers.
So the mythical 40:1 ratio eludes us. Ours is more like 62:1 - on a good day - which is why maple syrup is alchemical liquid gold.
And why we drink so much beer.
